Used to make the famous Tabasco Sauce from Avery Island, Louisiana.  Peppers mature from yellow-green to orange to red on tall 3-4′ plants.  They have a unique smokey flavor. They are hot, so don’t go overboard the first time you use them.  Grows especially well in the South and Southwest where the growing season is longest.  In frost-free areas, plants can live for several years.   Used fresh, dried or ground into a powder.  90 days from transplant.
